Ingredients for the baked potato slices recipe:

  • 2-3 large Russet Potatoes
  • 1/4 cup olive oil
  • 1/2 packet Ranch seasoning
  • 1-2 tsp black pepper
  • 1 cup mozzarella cheese
  • 1 cup 4 cheese Mexican or Italian blend
  • 5-6 slices of bacon (can use bacon bits)

How to Make This Baked Potato Slices Recipe – Mini Potato Bites with Ranch

Preheat the oven to 350 and slice the potatoes to about 1/2 inch thickness.

Brush the potatoes with olive oil and sprinkle on the ranch seasoning and black pepper. Flip over each potato, brush with olive oil, sprinkle with ranch and black pepper.

Cook the bacon and allow it to drain and cool. If using bacon bits, skip this step.

Bake the potatoes for 20 mins. Then, turn the oven up to 375, flip each piece over. and bake for an additional 15 mins.

Remove the potatoes from the oven and turn the oven up to 425.

Top each of the potatoes with cheese and crumbled bacon. Return to oven for 5 mins to melt the cheese.

Mini Potato Bites

Serve warm with sour cream on the side.

Additional Ways to Flavor & Serve the Mini Potato Bites

Another way that you can serve these is to put a small amount of sour cream on top of the potatoes and then add the bacon bits. These make them individual baked potato slices that guests can grab and go.

If you don’t want to melt the cheese on the potatoes, simply add the cheese, sour cream, and bacon after the potatoes have been cooked. On days where we are short on time, we will mix the toppings into a bowl and spoon it on the potatoes once they have cooled a bit.

Add a little extra flavor by spicing up the sour cream if you want. For instance, these options for the sour cream will add some extra flavor.

  • Add 1 tbsp of ranch seasoning to 1/3 cup sour cream for a tangy dip.
  • Add 1 tsp of smoked paprika to 1/3 cup sour cream for an extra kick.
  • Sprinkle with a bit of chipotle seasoning for some spice.
  • Add chopped green onion to the toppings.
  • Sprinkle some garlic powder on the potatoes before you cook them to add flavor.

Use butter in the Baked Potato Slices Recipe. Instead of using olive oil, toss the potatoes in melted butter. You need just enough butter to coat the potatoes.

Sprinkle some salt and pepper on the potatoes before you put them in the oven. If tossing the potatoes with butter, add the salt and pepper to the butter before you toss.
